When a saddle is required
A saddle, sometimes called a cricket, sits on the uphill side of a chimney, a skylight or any wide penetration. Its job is to split the water and send it around either side rather than letting it pile up behind the obstruction.
Leave one out and you get exactly what you would expect: water sitting against the back of the chimney, debris collecting in it, and eventually a leak that appears somewhere well away from the cause.
A token triangle of metal tucked in behind a chimney is not a saddle, it is a ledge for leaves to gather on. It has to be pitched steeply enough to move water and wide enough to clear the penetration on both sides.

How do I know if mine is missing?
Look at the uphill side of the chimney. If the roofing runs straight into the back of it with no pitched section diverting water around, there is no saddle. Debris collecting in that spot is the other giveaway.
